55gm salmon, 1/2 pineapple (cut to bitesized pieces), 3 tbs cooking oil, 240ml coconut milk, 240ml water, 6 pieces of shallots(or 1 large onion) cut into small pieces, 2 cloves of garlic, 1 stalk of lemongrass (thinly sliced; used 4 inches from bottom), 50gm Tanjong Fish & Seafood Masala Powder, 10gm Tanjong Turmeric Powder, salt to taste.
Grind shallots on onion and lemongrass with a little water. Heat oil in medium flame, add in Masala and Turmeric Powder and sauté till fragrant for 4-5 minutes. Pour in coconut milk and water. Bring to boil. Add in pineapple and salt. Bring it back to boil. Reduce heat and simmer for 10 minutes. Finally, add salmon and continue to cook for further 3-4 minutes.
